For the Risotto…
350g Risotto Rice
Salt
25g Dried Mushrooms
40g of vegetable stock powder
A Bay Leaf
6 – 10 black pepper corns
For the Panna Cotta…
5 Cardamom Pods
100g caster sugar
75g caster sugar
1 bay leaf
6g Gelatin or 5g Agar (Vegan / Vegetarian)
25g icing sugar
You will need from your store cupboard ingredients…
For the Risotto…
Half a medium onion. Chopped.
150g fresh mushrooms (optional extra)
100ml of white wine (optional extra)
40g Unsalted Butter
75g Parmesan Cheese
A glug of oil for frying
For the Panna Cotta
500 ml of good quality double cream.
100ml of whole milk
250g strawberries
For the stock. If you are making your own or you can use the stock paste included in the pack!
2 large onions
3 large carrots
3 sticks of celery
