In this delicious Fresh Fish Cookery Demonstration Nick will show you how to fillet a flat fish and a round fish from scratch as well as how to deal with lovely local scallops in their shell. Then you’ll see how to prepare perfect pan-fried scallops with local black pudding, sole ‘en papillote’ and breaded goujons with homemade tartare sauce.
