The keys to success…
Place a tea-towel under your chopping board.
Remove the loose outer layers of the onion.
Cut from the root to the top or ‘North Pole to South Pole’. Do not cut the root off! This is what keeps the onion from falling apart when you are chopping.
For a fine dice make a horizontal cut parallel to the chopping board. Fingers on top only to hold the onion in place.
Now turn 90 degrees and slice lengthways at around 1cm slices.
Turn 90 degrees again and slice finely. Begin your slice with the tip of the knife over the onion and the handle raised. One smooth slice ‘Down and Forward’ and the handle should rest where the tip began.
Repeat.
When you get to the end you can lay the root flat and finely chop the remaining onion around it so there is no waste.
